What spices do I need to get started with Indian food?
The spices are what make Indian flavours so distinctive. There are so many different spices and different colours – where do you even start? I’ve tried to simplify things with this post – check out the foundational spices you need to get going with Indian cooking – you can make 95% of my recipes by having these spices on hand. Keep them in an airtight box in your pantry to keep the smells and flavours under control – particularly good if you’re only going to make Indian food on the odd occasion.
