My mum came to visit! I asked her if there’s a dish she’d like to cook for my blog – she chose one of our childhood favourites – Tahari. It looks complex, but Tahari is actually a really simple vegetable dish that’s full of flavour. Once you have the ingredients prepped, it’s a matter of throwing it together and letting it cook. Also very cheap and very filling.
Ingredients:
2 cups of basmati rice, washed
3 medium potatoes
1 medium onion, thinnly sliced
1 medium tomato, segmented (or a handful of cherries)
1 cup of peas
Ghee/Oil for frying
Spices:
2 tsps of cumin
4 peppercorns
4 cloves
4 green cardamoms
2 black cardamoms
2 bay leaves
2 sticks of cinnamon
4 tsps ground coriander
1/2 tsp turmeric
4 cloves of garlic, crushed
1 cm of ginger, crushed
Method:
Start by peeling your potatoes and cutting them into them into 2-3 cm cubes
Heat some oil in a large saucepan and fry off your potatoes.
Once browned (but not cooked through) remove your potatoes and set aside. By frying them off first they’re going to maintain their shape and not turn into mashed potatoes amongst all the other ingredients!
In the same oil as you fried the potatoes, add in all your whole spices and gently fry for 2 mins.
Add in your onions
…and fry until they start to brown
Time to add in your washed basmati rice. Fry a little. If the onions have absorbed all your ghee/oil, then add a little more.
And your ground spices
Mix to combine – make sure your ground spices don’t clump in one area by are well spread around the dish
Add in your peas and stir
…finally, add back your potatoes and your tomatoes.
Pour in 3.5 cups of cold water and bring to the boil.
Reduce to a simmer, add in salt to taste, give one final good stir to make sure nothing’s sticking to the base of your pan and cover
Leave it covered for 12 mins – don’t be tempted to touch it! Once you take the lid off, any steam will escape, killing the cooking process.
After 12 mins, take a peek. It should be moist, but not soaking wet. If there’s too much moisture, return to the heat with the lid off to remove the rest of the liquid.
Serve with lots of plain yoghurt & enjoy!

Do you think it would be too problematic to add some chicken in?
I was thinking if you cut the chicken up into small pieces and dumped it in with the onions, by the time the whole thing had finished, it should all be cooked through.

Absolutely could, to add a little more protein to the dish, but wouldn’t be a tahari, which is traditionally a vegetarian dish.
