Palak Paneer! High in iron and protein…

I had my good friend, Sanna, over for dinner – she’s a pain to cook for because she’s a vegetarian and gluten free, so steak, eggs and chips with a side of garlic bread were off the menu.  She’s also recently had a baby, so finding a dish that would offer her plenty of protein and iron was a must.  She requested Palak Paneer, so thought I’d make it for her and post the recipe here.  You may sometimes see Palak and Saag on a menu in an Indian restaurant – what’s the difference? Palak means ‘spinach’ while ‘Saag’ simply refers to ‘greens’.  So, a Saag dish will have spinach, plus other leafy greens; while a Palak dish will have just spinach.
