
I’ve been away for a while…
For the first time in some years I returned to my homeland of India. Not only was it a chance for the kids to see the rest of their family but also a chance for me to re-inspired about Indian cooking and food in general. So, I’ll be back with a few recipes, for sure, but in the meantime, here are a couple of shots of some of the amazing things I tasted while away.
First, a masala dosa (rice pancake stuffed with spicy potato subzi) and sambar (a spicy lentil and vegetable soup). It’s traditionally a southern dish, but you can get good versions all over India, these days. This was on the banks of the Ganges in Rishikesh, Uttarakand.
And secondly, this amazing tikka, although it looks like chicken, was completely vegetarian and made from a type of soy/tofu. I’ve never had this in my previous trips (tikka’d paneer is far more common) but it tasted awesome. Very rich, spicy flavour as well as having a hearty texture that was very filling. I could definitely be a vegetarian in India!
